Kodo Millet Sambar Rice | Healthy Meal with Sidhya Kodo Millet

Ingredients

| Mustard seeds | 1 tsp |
| Fenugreek seeds | 1 tsp |
| Asafoetida | 1/2 tsp |

| Sambar onions | 1/2 cup |
| Broad beans | 1/4 cup |
| Drum stick, carrot (steamed) | 1/2 cup |
| Tomato | 1/2 cup |
| Salt to taste | |
| Thin Tamarind water | 1 cup |
| Red chilli powder | 1 tsp |
| Dhaniya powder | 1 tsp |
| Sambar powder | 1 1/2 tbsp |
| Barnyard millet | 1/2 cup |
| Toor dal | 1/4 cup |
| Ghee | 2 tsp |
Instructions
- •Soak dal & millet together for 8 hours.
- •Pressure cook with 4 cups of water, salt & turmeric for 3 whistles on medium flame.
- •In a pan, heat oil and add mustard seeds, fenugreek seeds, asafoetida, dry red chilli & curry leaves.
- •Add the onions and cook till pink.
- •Add rest of the veggies and salt and cook till they are soft.
- •Add tamarind water and boil for 5–7 mins until the raw smell goes away.
- •Add in all the masalas and cook for 5 mins.
- •Add the cooked dal & millet and cook till it all comes together.
- •Add water to adjust the consistency if needed.
- •Finish with a good drizzle of ghee.
