Instructions

1. In a large bowl, combine the millet flour, semolina, sugar, citric acid, turmeric powder, salt, oil, and water. Mix into a smooth batter.

2. Just before steaming, add the Eno fruit salt and gently mix.

3. Pour the batter into a greased steaming tray and steam for 15–20 minutes, or until a toothpick comes out clean.

4. Allow the millet dhokla to cool slightly, then cut it into squares or sandwich-sized pieces.

5. Heat peanut oil in a pan. Add the mashed potatoes and Dabeli masala. Cook for 3–4 minutes until well combined.

6. Slice each millet dhokla piece horizontally to create a sandwich.

7. Spread sweet chutney on one side and garlic chutney on the other.

8. Fill generously with the prepared potato mixture.
