Preparing the Gruel (Ambali)
1. Wash the Sidhya Millet thoroughly and soak it in 6 cups of water for 6–8 hours.
2. Transfer the soaked millet to a clay pot (or a regular pot) and cook on a low flame for about 10–15 minutes, gradually adding the remaining water while cooking.
3. Allow the cooked millet porridge to cool completely.
4. Cover the porridge with a clean cotton or khadi cloth and let it ferment for 6–8 hours.
5. Once fermented, add salt to taste. Serve the Ambali with sambar, dal, curry, rasam, or buttermilk.
Preparing the Smoothie
1. Add your preferred fruit, soaked raisins, dates, almonds, walnuts, seeds, cardamom pods, saffron, and jaggery (optional) to a blender.
2. Add the fermented Ambali (gruel) and blend using pulse mode to preserve the beneficial probiotics.
